    Peanut Butter No Bake Cookies

    This Peanut Butter No Bake Cookies recipe works up in just minutes, whether at home or over a camp fire. Chewy, delicious, and satisfying... and some of the prep can be done before your camping trip!

    Just got back from our first camping trip of the season, to both Wheatley Provincial Park and Rondeau Provincial Park.

    In between exploring those parks themselves - and side trips to Keith McLean Conservation Lands and Point Pelee National Park! - we actually managed to make and shoot 8 new camping recipes for this blog!

    Had to wait for all the snow to melt, after all!

    Iโ€™ve already posted our Sloppy Giuseppes Recipe and my Chicken & Sausage Jambalaya Recipe, and today Iโ€™ve got a no bake treat recipe for you - no bake peanut butter oatmeal cookies.

    Like my Chocolate Haystack Cookies, these are no bake oatmeal cookies that can be cooked over a campfire... no candy thermometer needed, either.

    Also - and this is a great thing when camping - you can do part of this no bake cookies recipe up as a cookie mix. Weโ€™ll do a bunch of them up at the beginning of the camping season, for campfire cookies whenever we want to throw a batch on. Super convenient!

    This is one of the easiest cookie recipes you can make in a campsite. Just boil a few basic ingredients together, mix in some oats, and scoop it out.

    After a little setting time, youโ€™ll soon be enjoying these sweet treats. They have the BEST texture and peanut butter flavor - rich and hearty, super satisfying.

    Oh, and because itโ€™s oats and peanut butter? Itโ€™s easy to convince yourself that itโ€™s a breakfast food. I think itโ€™s fair, right?

    Anyway, letโ€™s look at what youโ€™ll need to make this easy recipe!

    Ingredients

    This no bake peanut butter cookies recipe uses super common ingredients, you shouldnโ€™t have any problem finding everything you need in any grocery store!

    A few notes for you:

    Old fashioned Oats

    This recipe uses rolled oats, AKA old-fashioned oats. Steel-cut oats, and any form of quick oats - AKA quick cooking oats or instant oats - arenโ€™t going to work the same way in this recipe, as they all behave differently.

    Finally, to make these as gluten free no bake cookies, just use gluten-free oats - everything else in the recipe is inherently gluten free!

    Creamy Peanut Butter

    Weโ€™ve only ever made this with creamy peanut butter, though Iโ€™m sure you could use almond butter, if you canโ€™t do peanuts.

    I wouldnโ€™t recommend using crunchy peanut butter in the same amount, though - youโ€™d need some extra peanut butter to make up for the volume lost to the peanuts.

    Weโ€™ve never made these cookies with natural peanut butter, as I donโ€™t want to sacrifice RV fridge space for a peanut butter that annoys me in the first place, LOL.

    Salted Butter

    I use salted butter, but you can use unsalted butter if thatโ€™s what you have on hand. Just add a good pinch of EXTRA salt to the recipe - about โ…› tsp.

    <

    Milk

    You can use whatever kind of milk you like to drink. 2% is a good default, but weโ€™ve been making this recipe with dairy-free milk - unsweetened almond milk - and it works just fine!

    Granulated Sugar

    I use plain white sugar, but you can use packed brown sugar if you prefer - itโ€™ll give the cookies a bit of a butterscotch flavour.

    That said, if youโ€™re doing these up as mixes - I recommend sticking to the granulated sugar, for best results. It wonโ€™t dry out and clump like brown sugar does!

    Everything Else

    Rounding out this no bake cookie recipe, you will need:

    Pure Vanilla Extract
    Salt

    I donโ€™t have anything to add, as far as these last few go. Like I said - really simple ingredients!

    Make Ahead Supplies

    If youโ€™re making this as a cookie mix, you will also need:

    1 Large Freezer Baggie
    1 Medium Freezer Baggie
    Sharpie Marker

    How to Make Peanut Butter No Bake Cookies

    The full recipe is in the printable recipe card at the end of this post. Here is the visual walk through, with some additional information.

    Cookie Mix

    Using a Sharpie, label the large freezer bag with the recipe name - No Bake Peanut Butter Cookies - the ingredients and amounts listed under โ€œTo use the mixโ€, and whatever directions you need (see below).

    Measure the oats and salt into the large bag, shake well to combine.

    Then, measure the sugar into the medium baggie. Press out any excess air, and seal.

    Place the medium baggie of sugar into the large baggie of ingredients.

    Press out excess air, seal, and store in a cool dark place until use.

    To Use the Mix:

    Get a hot fire going. (If cooking on a stovetop, you can do this at either medium heat or medium-high heat)

    As thatโ€™s heating up, spread a large section of parchment paper over your picnic table, or line a large cookie sheet or two, set aside. Dump the bag of oats into a heat safe mixing bowl.

    Measure the milk and butter into a dutch oven (or medium saucepan, if at home), place over the fire and allow the butter to melt. Once the butter is melted, add the packet of sugar to the pot.

    Bring the mixture up to a full boil, allow to boil for 2-3 minutes. (2 for softer cookies, 3 for slightly firmer cookies that set up faster!).

    Once the time is up, remove the pot from the fire.

    Measure the peanut butter and vanilla into the sugar mixture, stirring carefully to melt and incorporate the peanut butter.

    Once the mixture is smooth, add to the bowl of oats and salt, stirring to coat everything evenly.

    Using two spoons (or a medium cookie scoop), drop mounds of the cookie dough onto the prepared work surface or pans.

    Allow cookies to fully cool โ€“ cookies will harden and set up as they cool to room temperature.

    Once fully set, transfer cookies to an airtight container โ€“ these will keep a long time, assuming they go uneaten that long!

    Campfire Oatmeal Peanut Butter No Bake Cookies

    • Sharpie Marker
    • 1 Large Freezer Baggie

    Ingredients

    Cookie Mix:

    • 3 cups Rolled Oats
    • ยผ teaspoon Salt
    • 1 ยพ cups Granulated Sugar

    To Use the Mix:

    • ยฝ cup Milk
    • ยผ cup Salted Butter
    • 1 cup Creamy Peanut Butter
    • 1 teaspoon Pure Vanilla Extract

    Instructions

      Such an easy cookie recipe. We do up a bunch of mixes before camping season, for easy campfire cookies all year! Hope you love this recipe as much as we do.
