    No Bake Cornflake Cookies

    My No Bake Cornflake Cookies are a fun campfire treat. A bit of prep work before a camping trip makes them SUPER easy to cook on a campsite!

    Ok, I’m ALMOST caught up on working my way through the recipes we photographed on our first camping trip of the season, when we went to Rondeau Provincial Park and Wheatley Provincial Park, with several trips to Point Pelee National Park.

    So far, I’ve posted the recipes for Peanut Butter No Bake Cookies, Dutch Oven Jambalaya, Sloppy Giuseppes ,Campfire Chicken Curry, Bacon Cheeseburger Soup, and Egg Roll in a Bowl.

    Today, it’s time for my no bake peanut butter cornflake cookies recipe!

    These easy peanut butter cornflake cookies work up in a matter of minutes, and are a fantastic sweet treat to cook up over a campfire.

    I love doing up no-bake desserts - especially no bake cookies - when we’re out camping. Because they can be cooked over a campfire, you can even make them on a hot summer day, without worrying about heating up your tent or RV!

    These no bake corn flake cookies might just be our FAVOURITE easy dessert for the campsite.

    The combination of peanut butter and crunchy cornflakes is a little different from our other campfire cookies - Peanut Butter No Bake Cookies and Campfire Chocolate Haystack Cookies, so far.

    They’re sweet and slightly salty cookies, with a fun, chewy texture - kind of like Rice Krispies treats. Just a really satisfying taste and texture, for only a few minutes work!

    We knew after our first batch that they were going to be a regular menu item for future camping trips.

    Anyway, let’s take a look at what you’ll need for your own batch of no bake cornflakes cookies:

    Ingredients

    This no bake cornflake cookie recipe uses super simple ingredients - you won’t have any difficulty finding everything you need in any grocery store.

    As always, I have some ingredient notes for you:

    Creamy Peanut Butter

    This recipe was developed using smooth peanut butter.

    If you’re intent on using chunky peanut butter / crunchy peanut butter, you’ll need to use a little extra, to make up for the volume of actual peanut butter that’s lost to peanut pieces.

    If you can’t do peanut butter, this recipe should work fine with almond butter or sunflower butter.

    Everything Else

    Rounding out this recipe, you will need:

    Corn Flakes Cereal
    Granulated Sugar
    Light Corn Syrup
    Vanilla Extract
    Salt

    Like I said... really basic ingredients!

    How to Make No Bake Cornflake Cookies

    The full recipe is in the printable recipe card at the end of this post, here is the visual walk through:

    Optional, Head of Time Prep

    Mix together the peanut butter, sugar, corn syrup, and salt. Pack in a clean, airtight container. (I’ll usually just mix it on the site, though!)

    Using a Sharpie, label the freezer bag with the recipe name - No Bake Cornflake Cookies - a note to add 1 teaspoon Vanilla, and the directions (abbreviated however you like.)

    Measure the Cornflake cereal into the baggie. Carefully press out any excess air, and seal.

    To Make the Cookies

    Get a hot fire going. (You can cook these on a stove top - medium heat!)

    Spread a large section of parchment paper over your picnic table, or line a couple large cookie sheets, set aside. Empty the baggie of corn flakes into a heat proof bowl, set aside.

    Transfer the peanut butter / sugar mixture (or measure those ingredients) to a Dutch oven or large sauce pan, and place over the fire.

    Bring the peanut butter mixture JUST to the start of a full boil, stirring constantly to prevent scorching.

    Once the syrup mixture starts bubbling, remove the pot from the fire.

    Stir in the vanilla, then pour mixture into the bowl of cornflakes.

    Gently fold to combine everything, ensuring that the syrup mixture is evenly coating the cereal.

    Using two spoons - or a medium cookie scoop - drop mounds of the cornflake mixture onto the prepared work surface or pans.

    Allow cookies to fully cool to room temperature – cookies will harden and set up as they cool.

    Leftovers and Storage

    Once hardened, place cookies in an airtight container for storage. Because they tend to stick to each other, it’s best to store in layers, with a piece of parchment paper between each single layer of cookies.

    Best eaten within 2-3 days.

    No Bake Cornflake Cookies

    Equipment

    • 1 Medium Pot

    Ingredients

    • ½ cup Creamy Peanut Butter

    Notes

    Store in an airtight container – these will keep a long time, assuming they go uneaten that long!
