My No Bake Cornflake Cookies are a fun campfire treat. A bit of prep work before a camping trip makes them SUPER easy to cook on a campsite!

Diet: Gluten Free, Vegetarian
Servings: 16 Cookies
Calories: 122kcal
- ½ cup Creamy Peanut Butter
- ½ cup Granulated Sugar
- ½ cup Light Corn Syrup
- ¼ teaspoon Salt
- 1 teaspoon Vanilla Extract
- 3 cups Cornflakes Cereal
Get a hot fire going.
Spread a large section of parchment paper over your picnic table, or line a couple large cookie sheets, set aside.
Transfer the peanut butter mixture to a Dutch oven, and place over the fire.
Bring the peanut butter mixture JUST to the start of a full boil, stirring constantly to prevent scorching.
Once the mixture starts bubbling, remove the pot from the fire.
Stir in the vanilla, then gently fold in the cornflakes.
Using two spoons, drop mounds of the cookie mixture onto the prepared work surface or pans.
Allow cookies to fully cool – cookies will harden and set up as they cool.
Store in an airtight container – these will keep a long time, assuming they go uneaten that long!
