No Bake Cornflake Cookies

My No Bake Cornflake Cookies are a fun campfire treat. A bit of prep work before a camping trip makes them SUPER easy to cook on a campsite!

Equipment

  • 1 Medium Pot

Ingredients

  • ½ cup Creamy Peanut Butter
  • ½ cup Granulated Sugar
  • ½ cup Light Corn Syrup
  • ¼ teaspoon Salt
  • 1 teaspoon Vanilla Extract
  • 3 cups Cornflakes Cereal

Instructions

  • Get a hot fire going.
  • Spread a large section of parchment paper over your picnic table, or line a couple large cookie sheets, set aside.
  • Transfer the peanut butter mixture to a Dutch oven, and place over the fire.
  • Bring the peanut butter mixture JUST to the start of a full boil, stirring constantly to prevent scorching.
  • Once the mixture starts bubbling, remove the pot from the fire.
  • Stir in the vanilla, then gently fold in the cornflakes.
  • Using two spoons, drop mounds of the cookie mixture onto the prepared work surface or pans.
  • Allow cookies to fully cool – cookies will harden and set up as they cool.

Notes

Store in an airtight container – these will keep a long time, assuming they go uneaten that long!
