Mexican Sloppy Joes - "Sloppy Jose" Sandwiches

These Mexican Sloppy Joes are a fun, flavourful update to traditional sloppy joes. A bit of food prep makes them an easy freezer meal option!

Ingredients

Mexican Sloppy Joe Filling

  • 1 tablespoon Olive Oil
  • 1 lb Lean Ground Beef
  • 1 Poblano Pepper Seeded and Chopped
  • 1-2 Jalapeno Peppers Seeded and Finely Chopped
  • ½ Onion Finely Chopped
  • ¾ cup Tomato Sauce
  • 1 tablespoon Brown Sugar
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Hatch Chili Powder
  • 1 teaspoon Smoked Paprika
  • ½ teaspoon Crushed Chilies
  • ½ teaspoon Dried Oregano
  • ½ teaspoon Ground Cumin
  • ½ teaspoon Onion Powder
  • Salt and Pepper to taste

Assembly and Toppings

  • 4 Kaiser Buns
  • Monterrey Jack Cheese
  • Shredded Lettuce
  • Red Onion
  • Avocado
  • Jalapeno Slices
  • Cilantro

Instructions

  • Get a medium campfire going, or get your charcoal on the go. (If you’re making this on a stove, use medium-high heat and a nonstick pan.)
  • Add the ground beef and olive oil to a large cast iron skillet - or a dutch oven, and set over the fire or hot coals.
  • Cook - breaking up the meat as it cooks - just until it’s cooked though. Add the peppers and onion, continue cooking until the vegetables are tender, another 2-3 minutes.
  • Add the remaining ingredients to the pan, stir well to combine.
  • Allow to simmer for about 15 minutes, or until thickened to the texture you like. (I'll usually turn the stove down to medium low or medium heat, when cooking this at home.)
  • Season with salt and pepper, to taste.
  • Divide Mexican Sloppy Joes mixture between your buns, serve hot, topped with your choice of garnishes!

Notes

Leftover Mexican Sloppy Joes mix can be cooled to room temperature, then stored in an airtight container in the fridge for 3-4 days. Reheat before serving.
