Easy Pie Iron Pizza - Campfire Pizza Pockets!

Equipment

  • Pie Iron
  • Cookie Sheet
  • Grill or Campfire

Ingredients

  • Butter or Pan Spray. Hint: Garlic butter is especially nice!
  • 2 Slices Bread of Choice
  • 2 tablespoon Pizza Sauce
  • ¼ cup Shredded Mozzarella Cheese
  • Pizza Toppings of Choice Pepperoni, chopped mushrooms, chopped green peppers, sliced black olives, cooked Italian Sausage, etc.

Instructions

  • Get a good fire going. You can cook your Pie Iron Pizza on a camp stove, over hot coals, or even over the open flame of a fire pit.
  • Warm pie iron for a few minutes, then transfer it to your workspace - Using a cookie sheet is the easiest way to protect your food from whatever may be lurking on the picnic table... and picnic tables from getting scorched by hot irons!
  • Butter the inside of the pie iron, or spray generously with nonstick spray.
  • Place a slice of bread on one half of the open pie iron. Spread with up to 2 tablespoons of your choice of sauce, up to ¼ cup of shredded cheese, a few slices pepperoni, and whatever other toppings you want.
  • Top with another piece of bread, close pie iron - try to get all of the bread and toppings completely inside of the closed pie iron.
    I like to use a sharp knife to trim off any exposed crust, as it will just char during the cooking process.
  • Position your pie iron over your fire or grill, cook for a couple minutes on each side.
  • Check your work - you want the bread to be crispy and golden brown, and your filling hot and melty. If it’s not quite there yet, close iron and return it to the heat source.
  • Once you’re happy with the campfire pizza pocket, carefully remove it from the pie iron, and serve hot!
